Under the general direction of the Campus Dining Director, the Registered Dietitian & Sustainability Coordinator (RDSC) is responsible for establishing and communicating the nutritional philosophy and programs for Campus Dining Services. The RDSC provides nutritional education to staff, students and student groups, oversees the implementation and maintenance of comprehensive nutrition and wellness tools, and supports the culinary team to uphold standards in these areas. The RDSC acts as the advocate for nutrition, wellness and culinary trends, and contributes Quality Assurance management within the dining program.
The RDSC advances Campus Dining (CD) and Cal Poly Corporation’s (CPC) efforts as a sustainability leader on campus by working with management, campus staff, and students to develop and maintain sustainable practices in strategic planning efforts and daily operations. Works with other CD staff to research and implement facility, vehicle, and waste stream sustainability and communicate these efforts on behalf of CD.
