Gustolab International and the Borromini Institute offer students, faculty and independent scholars a base in the heart of Rome to pursue field studies in the disciplines that are changing the world, from food systems and sustainability to interdisciplinary studies of place, people, cities and technology.
Our Fall 2022 study & intern abroad program in Rome, Italy is now open for applications.
We would like to highlight two courses:
Sustainable Rome: The course will examine Italian culture, past and present, through the perspective of environmental and cultural sustainability. After a general introduction to Italy and its regional traditions the course will examine
contemporary issues of sustainability related to urban space, social equity, energy, mobility, waste, water and agriculture with lessons devoted to the success of the Mediterranean diet, food production, distribution, and consumption.
Food Production: Olive Oil & Wine: The course addresses specific foods common in Italy during the Autumn season: olive oil and wine. Both derive from local products which ripen in the fall, but while olive oil is cold-pressed grapes require fermentation before becoming wine. The course will use both products as case-studies in the transformation of raw materials from the earth to final products in the global food economy (and on tables around the world). The course is distinctive for its interdisciplinary and comparative approach to sustainable agriculture and food as well as its combination of in-class teaching and various forms of “practicums,” such as fieldwork and study tours.

Short Description
Under immediate supervision, on a temporary basis for a period not to exceed 6 months, performs routine and unskilled manual labor tasks
at Chain O'Lakes State Park.
Job Responsibilities
Performs routine and unskilled manual labor task in the maintenance of the site grounds including, but not limited to, mowing grass, clearing areas of weeds and brush, patches roads,
paints signs and picnic tables; maintains tools and equipment; operates trucks for collection of trash/garbage
Performs routine and unskilled manual labor tasks in the maintenance of the site buildings including, but not limited to, cleaning and disinfecting restrooms and shower buildings,
sweeps and mops floors; washes windows, dust furniture.
Assists in inspecting public use areas for public safety and hazards reporting findings to supervisor; watches for prowlers, fires and other causes which might endanger or
result in loss or damage to property and reporting findings to supervisor.
Directs traffic; registers hunters and operates checkstation; in event of emergency, contacts supervisor or notifies appropriate authorities.
Assists in performing routine maintenance to equipment and vehicles, i.e. changing oils, fluids, filters, spark plugs and belts; washes vehicles.
Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.
